i'm perfecting the art of making banana bread. as is my typical m.o., i eat lots of bananas (and other fruit). i like my bananas slightly on the green side, though, and in the summer they tend to ripen faster than i can get them down my gullet. instead of being smart and buying fewer bananas at a time, i let them get to banana-bread ripeness. i can't bear to throw them away-- i have to make good use of them instead. last night i made this summer's third batch of banana bread. i use tried-and-true better homes, but i make my own adjustments with minor ingredients, time, etc. this time, the personal touches were chocolate chips and extra cinnamon.
it was near-perfect execution, which is a rarity for me. i even got compliments from our resident pastry chef! i guess when it's my standard go-to so i don't feed the landfill, i have nowhere to go but up. yum!
